HAKKASAN HINTS AT MENU, DESIGN


Michael Mina, Charlie Palmer and Julio Serrano together? Apparently no one else in the country could eat gourmet last night.

Last night Bon Appetit Editor in Chief Adam Rappaport, Restaurant Editor Andrew Knowlton and others played host to select media, foodies and VIPs at Hakkasan San Francisco to celebrate the full announcement the Vegas Uncork’d roster.

Hakkasan’s Chef Ho Chee Boon led the charge on a mini grand tasting, revealing that the Vegas menu will share about 60 percent of its dishes with other restaurants in the group, with 40 percent unique to the MGM Grand location. He says he plans to finalize the menu over the next month.

Didier Souillat and Eric Barth, who respectively serve as Hakkasan’s COO/managing director and director of operations for Las Vegas, were also on hand and revealed that the design for Vegas will share some similar elements to their sister restaurants, like interlocking cage elements and overall Chinois chic aesthetic, but Vegas will feature much larger private rooms and a long bar will be a focal element (San Fran has a striking horseshoe shaped one).

As far as an opening time frame, expect a soft opening in mid-to-late April with a tentatively planned grand opening set for early May. They note tht everything should be going full bore by the time Vegas Uncork’d launches on May 9. Other notables like Mary Sue Millikan, Charlie Palmer, Christina Wilson (Hell’s Kitchen winner and chef de cuisine at Gordon Ramsay Steak), Julian Serrano and Michael Mina also turned out and the latter revealed that he’s excited to preview his new Pub 1842 concept at Uncork’d. He promises that, “It will be unlike anything I’ve done to date” and that it will debut in his former Seablue space at MGM this June.
