Proof that everything goes better with nectar.
Someone, somewhere once realized that instead of taking tequila drinks and trying to sweeten them the way you would other cocktails with sugar, juices or whatnot, you could use agave nectar to get a more coherent taste to your tequila drinks.
This person was brilliant, and they need to get to work on whiskey syrup immediately.
The Ambartini takes two parts Ambhar Platinum, two parts fresh lime, one part Cointreau and one part agave nectar shaken and strained into a cocktail glass complete, in grand Martini tradition, with olives. If you like to keep things on a Margarita tip, a salt rim is optional.
The nectar gives this mix an overall sweetness with the lime and the tequila cutting through for a big brightness underneath. Ambhar is a very, very smooth silver without a super peppery bite, which makes it extremely mixable — especially here in a drink with such a strong presence from the nectar.
Up front, you get a hint of floral notes in the nose from the Ambhar. It keeps sweetness at bay before the lime takes and balances out the cocktail with an exit wash of citrus. You don’t even notice a strong burn until it’s halfway down — it’s a happy afterthought, a pleasant reminder.
