If there’s one thing casinos have been missing, it’s bushels and bushels of fresh produce. Sometimes, when you’re sitting there pounding away on the max bet button at nickel slots, all you want is a cold beer and some just-picked arugula. Or do you have to be some kind of high roller to get a nice, freshly washed artichoke while you’re playing? Snobby baccarat guys.
Anyway. Chef Mario Batali kicked off Bet on the Farm at Palazzo to promote sustainable food and wine, showcasing produce from regional growers, bread from local bakers and eco-friendly wine. Batali and Joe Bastianich’s restaurants Carnevino at Palazzo and B&B Ristorante and Enoteca San Marco at The Venetian are the first two Certified Green Restaurants on the Strip, as per the Green Restaurant Association.
You know, when selecting a bottle of wine, how eco-friendly it is isn’t really our first concern. How many glasses it’ll take us to sing “O Sole Mio” while wandering the Venetian canal, however, is. This is probably why we keep it strictly to fortified wines.
