PLATINUM’S PEACOCK UNVEILS COCKTAILS

The Platinum Hotel and Spa’s Stir Lounge is classy, modern and refined — and since there’s no gaming inside The Platinum, there’s less chance of you getting wrecked and blowing your rent on blackjack.
And thanks to Niles Peacock, you’ll have plenty of reasons to get drunk at Stir (or upstairs on the fifth-floor restaurant lounge). The hotel’s inventive mixologist keeps coming up with creative cocktails to keep patrons coming back for more.
His latest batch of specialty drinks includes Mexican Eggnog (a rich, spicy combo of Pink Vodka, horchata, grenadine and Tabasco), Cherry Milk (Three Olives cherry vodka, vanilla cello, cream and cherry juice garnished with a Maraschino cherry) and the Twisted Lime Martini (lime and lemongrass cellos mixed with Hendrick’s and Baffert’s mint gins).
Those cellos are Peacock’s highlights among his accomplishments at The Platinum. He’s handcrafted the entire line, which consists of up to 20 different varieties, including ginger, hibiscus and Bazooka bubblegum. In addition to serving as distinctive ingredients for his concoctions, the cellos also make for daringly strong shots on their own. Trust us, we know. We’ve tried them.
The Japanese-born Peacock is a world traveler who helped open such legendary South Florida nightspots as Sky Bar and W6. In addition to bartending gigs at Liquid, Level and Mansion, Peacock also managed the Ajax Tavern at the Little Nell is Aspen, Colo., a Mobil Five Star and AAA Five Diamond resort.
